Creamy Tomato Avocado Soup

This soup is hearty and hides some great protein and vitamins.  Using homemade chicken broth is another way to up the minerals and improve your immune system.  This is a delicious way to do it!


  • 1 can tomato paste (organic preferred)

  • 2-3 cups of chicken stock from pasture-raised chickens

  • 2 TB butter

  • 1/2 yellow onion, sliced or diced

  • 1 TB lime juice

  • 1 teaspoon chili powder

  • 1 teaspoon basil (or a bit of fresh basil if you have it!)

  • 1 teaspoon oregeno

  • 2-3 teaspoons Celtic sea salt

  • 1 avocado, peeled and diced

  • 1 clove of garlic


1. Heat butter in saucepan.  Add onion and saute until softened, about 2-3 minutes.  


2. Add tomato paste, garlic, spices and salt.  Simmer mixture about 20 minutes until flavors blend.

3. Remove from heat and cool slightly.

4.  In a blender, pour in 1/2 of the soup and add 1/2 the avocado and 1/2 of the lime juice.  Blend until creamy.  Return to another pan and then repeat with 2nd half of the soup mixture and remaining avocado and lime juice.

5.  Keep warm in saucepan and serve immediately. Stores well in fridge for several days or in freezer for longer periods.
